This Specific Carbohydrate Diet (SCD) chicken ball appetizer is a sure crowd pleaser. Eat 'em before they're gone.
Ingredients
- 2 lbs ground/minced chicken
- 1 cup almond flour
- 1 tsp garlic powder
- 1 Tbsp ground coriander
- 1 tsp red pepper flakes
- 4 spring onions, minced
- 1 cup fresh cilantro, minced
- 1/4 cup honey
- 1 tsp hot chili oil
- 1 jalapeno, diced
- 1 lime, juiced
- 4 Tbsp (olive) oil for frying
Directions
Yield: 4 servingsPrep time: 20 minutes
Cook time: 25 minutes
Total time: 45 minutes
- Preheat oven to 400 degrees F.
- Combine all ingredients (except frying oil) in a bowl. Mix well.
- Form 1-2 inch balls from mixture. Fry all balls until brown (about 1-2 minutes per side, flipping only once). This may need to be done in batches. Place fried balls on baking sheet.
- Bake all balls at once for 10-15 minutes.
- Serve and enjoy!
